Extension Assistant I, Nutrition Education, Latino Outreach


The Extension Assistant I position provides assistance for the EFNEP/TNCEP Project Director and Extension Specialists to help plan, implement, and evaluate two statewide, federally-funded nutrition education programs--the University of Tennessee Extension Supplemental Nutrition Assistance Program: Tennessee Nutrition and Consumer Education Program (UT SNAP-Ed: TNCEP), and the UT Expanded Food and Nutrition Education Program (UT EFNEP). This Extension Assistant position will support the program efforts to provide outreach education and appropriate materials in English and Spanish to reach qualified Latino adult audiences. Duties include delivering current, research-based nutrition information to agents and program assistants, authoring and translating publications for public distribution, and preparing appropriate training materials and programs for extension personnel. In addition, the Extension Assistant will plan, conduct, implement and evaluate assigned phases of TNCEP and EFNEP programs in such a manner that they meet the needs of all participants.



The duties of the Extension Assistant are as follows:

• Translate program materials and curriculum from English to Spanish to reach qualifying Latino audiences

• Develop and produces effective educational publications and curriculum

• Prepare and deliver current, research-based subject matter information and educational training to extension personnel through in-person and/or web-based in-service training

• Program evaluation to determine effectiveness and cultural appropriateness of program materials

• Conducts needs assessments to identify gaps in reaching qualifying audiences

• Provide leadership for planning, implementing and evaluating the statewide nutrition education programs, TNCEP and EFNEP



• Bachelor’s degree in Nutrition or Family & Consumer Sciences related area with GPA of 2.7 or above

• Minimum one year working in the field of nutrition education

• Verbal and written fluency in English and Spanish

• Experience creating materials for low-literacy audiences and/or limited-resource audiences is desirable

• Experience working with Extension programs is preferred

• Experience working with nutrition education program materials is preferred

• Demonstrated ability to translate materials from English to Spanish

• Ability to work with limited resource and low-literacy audiences is preferred

• Proficiency in priority management, organization, and multitasking skills

• Ability to pay close attention to detail

• Strong written and verbal skills in both English and Spanish

• Demonstrated ability to follow supervisory instructions and complete assigned tasks in a timely manner

• Demonstrated ability to communicate effectively both verbally and in writing to professionals and public audiences

• Demonstrated ability to motivate and work with others effectively in a team-oriented environment

• Ability to travel statewide

• Strong computer literacy skills, especially with Microsoft Office applications

• Registered Dietitian Nutritionist (RDN) preferred
